Since we don’t feel comfortable eating out just yet and I wanted my Hubby to have a Fabulous Birthday dinner, I’ve decided I can create anything he likes at home!
Our “Castle Of The Seas” is fully operational, lol ( a little cruise humor for those who love cruising on RC ships).
My family loved our New Year’s table and Alex asked if I can make lobster tails and lamb chops for us again.
Celebration of Life continues at our house!

Almost every year I make these feasts for Alex’s birthday, he loves it and always appreciates the hard work that goes into creating such meals.
I don’t mind at all!
It’s the least I can do to make his life more enjoyable. My husband works hard for 30+ years so I didn’t have to.
I loved being a Stay-At-Home-Mom all these years; raising our boy, homeschooling him when he was younger, teaching Arts and Craft classes at our local Parent’s Coop group, time for my hobbies, and having the time creating my blog where I can share recipes with others.
This is just a little token of my love and appreciation for everything that he does for us!
God gave me a wonderful man to share life with!

- Baked Garlic Lobster Tails
- Marinated Greek Lamb Chops with Mushrooms and Tomatoes
- Shrimp Scampi with pasta
- Teriyaki Salmon bites with caramelized onions, mushrooms, and peppers
- Fried Rice
- Chopped Salad with Avocado Ranch dressing
- Naan Dippers with French Garlic Herb spreadable cheese
- And plenty of candy, cookies, and fruit!
Baked Garlic Lobster Tails
Cooking Lobster Tails at home might sound Fancy, but nothing can be easier than this!
For the New Year’s we have bought smaller 7oz. lobster tails at Walmart, 2 for $12.50. This time we have bought 2 packages at Costco, 4 in each and much larger, probably 9oz.
This dish looks Fabulous but Super Easy to prepare and instead of me explaining how it’s done you can see it here for yourself!
TIP: make sure to season the UNDERSIDE of the lobster meat as well for more flavor.
When serving, brush the Lobster Tails with a mix of melted butter, garlic powder, paprika and sprinkle with fresh parsley.
Marinated Greek Lamb Chops with Mushrooms and Tomatoes
This is one of our favorite dishes.
Every time we shop at Costco we always pick up Lamb roast or Lamb loin chops or Rack of Lamb, they have the best prices on the Lamb!

Teriyaki Salmon bites with caramelized onions, mushrooms and peppers
I just happened to have Salmon from Costco on hand for dinner. I was planning on making Salmon Kabobs on my beloved Cuisinart Griddler for Alex’s birthday, but this recipe was quicker and less cleaning, lol.
First, in the hot skillet caramelize onion, mushrooms and peppers. Add Teriyaki sauce. My absolute favorite is Veri Veri Low-Sodium Teriyaki. It’s thick and tasty.
Cube Salmon, drench in flour/salt/pepper.
Sear Salmon cubes in oil and butter until fully cooked, then add Teriyaki sauce.
Super Simple and so DELICIOUS!

I’ve added some quinoa that I had on hand.
Chopped Salad with Avocado Ranch dressing
I’ve used this Organic Avocado Ranch Chopped salad from Costco as the base but added tomatoes, cucumbers, olives, mozzarella, and feta cheese.
Served it with dressing from the package. It turned out incredible!!!
Naan Dippers with French Garlic Herb spreadable cheese
I just love these NAAN dippers from Costco! Super-versatile bite-sized snacks for any party!
- Preheat oven to 400F.
- Brush both sides of dippers with olive oil or butter.
- Sprinkle your favorite seasoning on one side. I’ve used garlic powder and Italian spices.
- Place on an ungreased baking sheet.
- Bake for about 8-10 min or until golden and crispy.
- Serve warm!
You can sprinkle these NAAN dippers with sugar and cinnamon or make little pizzas. Endless possibilities!
I’ve served them with this incredible Garlic and Herb spreadable cheese from France that I have found at Sprouts Farmers Market. If you find it, do try it! So good!
I always prepare a lot of food even though we have a small family since I pack food for my mother-in-law to take home.
She doesn’t cook much for herself since she takes care of her husband that has been through so much and can’t eat most of the things. So it’s a big treat for her to have Yummy leftovers!
I’ve used our everyday Corelle Chip Resistant Extra Large 11” Dinner Plate. I was looking for larger size plates and found these on Amazon.
