Baked Parmesan Garlic Colossal Shrimp

Not to brag, but if we want to eat Fancy – we eat at HOME! This was our Tuesday dinner, no special occasion, no holiday, kinda felt guilty eating it. But, it just happened that we bought these INCREDIBLE – COLOSSAL SHRIMP on sale at The Fresh Market just a couple of days ago.

Never in our life have we ever had shrimp this size. They are literally little Lobsters and are Very Meaty! But, I couldn’t get a good picture to show their true size.  We bought 2 pounds and got just 10 shrimp, so you know they are HUGE!

This one of our Favorite meals since it literally takes about 20 minutes to have this very FANCY dinner at home!  You can make Zoodles (zucchini noodles) instead of pasta or rice for a Healthier option.

Here you can see how truly COLOSSAL these shrimp are comparing to large shrimp on the left side. 
 
It was such a Great Deal that we couldn’t pass by. Unfortunately for two pounds you only get 10 of these.  Can you imagine how expensive they would be if you ordered them at the restaurant?

How to prepare Baked Parmesan Garlic Shrimp:

  1. In a small bowl, mix melted butter, wine, lemon juice, and garlic powder.
  2. Arrange shrimp in a single layer on baking sheet and brush or dip the shrimp into butter mix.
  3. Sprinkle shrimp with paprika, dry parsley, and parmesan.
  4. Arrange veggies and lemon slices around shrimp.
  5. Bake in the Preheated at 400°F oven for about 10 – 12 minutes.

I didn’t peel them this time since I was Lazy and shrimp look Beautiful unpeeled! I do suggest to peel them first if you have the time and patience!

 
You can roast veggies at the same time as the shrimp on the second shelf in your oven. Veggies need to be roasted longer about 20 at 400F.

  • 2 pounds Large or Jumbo Shrimp, peeled and deveined
  • ½ cup butter, melted
  • 2 tbsp. olive oil
  • ⅓ cup white wine
  • 2 tbsp. lemon juice
  • 1 tbsp. garlic powder

  • 1 - 2 tsp. dry or fresh parsley
  • ½ cup grated parmesan cheese
  • lemon slices
  • sliced bell peppers and edamame (optional)
