Christmas Dinner 2022! We had such a great time celebrating Christmas! As long as we are together, healthy and happy, it’s a special occasion for me! Especially when Joshua comes home, we are all so happy to see him!

I was just so busy the last few days, cooking more than what you see on the table, so I could pack food for Joshua to take with him; plus, he brings so much laundry and always alteration projects for me. At least he didn’t ask me for a haircut this time, lol. Mom does it all!
 
Alex, seeing me working so hard, promised we would go out more to give me much-needed relaxation.
 
I enjoy creating these Holiday tables, but it gets more difficult as I get older. I do have so many recipes and ideas on my blog. I hope you will find them helpful!
 
Some of you have asked me if I get any help cooking and how long it takes me to cook for the holidays. 
 
Yes, I cook everything myself, with the help of Costco (buying our favorite items you need to reheat or bake).
 
On occasion, my mother-in-law will make Salad Olivier and Chicken Liver Pate, which we love!

HOW I CREATE THESE HOLIDAY TABLES

The whole process takes me about 3 to 4 days:

A day of planning, a day of decorating, and two whole days of cooking.

Two refrigerators (one from previous owners in the garage) and a double oven make it all possible. Not sure if I were able to accomplish it in a small apartment with a small fridge. 

It took me 3 days to create this Christmas table.

My Father-in-law made a joke many years ago: “I will rest in the coffin!”. It stuck with me.

While I have the energy, I like being productive and bringing joy to the people that I love!

How to make Delicious Salad Olivier

  • 2 pounds potatoes, boiled, peeled, and finely diced
  • 3 eggs, hard-boiled, finely diced
  • 1 onion, finely diced
  • 3/4 cup mayonnaise
  • 3 small dill pickles, finely diced
  • 1 cup canned peas or frozen peas
  • carrots (optional)
  • dill, minced
  • Salt and pepper

Mix all ingredients, and add more or less of the ingredients to taste. Enjoy!

Soviet Era delicacy that is always served on Holidays!

We bought seledka/herrings at the local Euro Deli store, and I boiled young potatoes and served them with butter/oil, garlic, and dill.

Salmon Red Caviar we buy at the local European store. 

This is the brand that we like and normally buy. You can buy it on Amazon as well.

Once we discovered these Spanokopita cheese and spinach in phyllo pastries at Costco, I decided not to make my own again. These are just perfect, and I keep buying them once we run out.

Great to have in the freezer just in case you have company over. They are best prepared just before serving when they are hot and crispy. They take almost no time to bake, so it’s not a problem.

Bacon Crostini 

Ingredients:

  • French baguette, cut into slices
  • good quality olive oil
  • tomatoes, chopped
  • garlic clove, minced
  • cooked crispy bacon chopped
  • cheddar cheese or any you have on hand

Preheat the oven to 400°
Brush slices with olive oil, and top with chopped tomatoes, garlic, bacon, and cheese.
Bake until the cheese is melted and browned, about 2 to 3 minutes.
Serve.

These easy-peasy BLUE CRAB SPREAD MUSHROOMS make an awesome holiday appetizer, perfect for your next party!

We love the BLUE CRAB SPREAD from Costco!
I use it on top of fish or just as a spread on top of fresh sliced bread.
 
The Large Portabella mushrooms are from Costco as well. 

HOW TO MAKE BLUE CRAB SPREAD MUSHROOMS

Ingredients:

  • Blue Crab Spread or you can make your own by mixing crab meat with mayo or cream cheese
  • Italian Style Panko breadcrumbs (optional). Leave out for low-carb mushrooms.
  • Cheddar cheese or any you have on hand

Wipe mushrooms clean with damp paper towel. Remove stems and scoop out gills. Discard.
Stuff each mushroom cap generously with the blue crab spread.
Sprinkle with Italian-style panko breadcrumbs.
Top with cheese.
Bake at 375F for 15 to 20 minutes or until edges become golden

We normally don’t buy such high-calorie items in such huge portions, but for the holidays decided to try it. And like so many, we are in complete agreement – THIS IS THE BEST TASTING CHOCOLATE CAKE!
