Blueberry Syrniki (Russian cheese pancakes) Творожные Сырники!

  • 1 package of Lifeway Bazarny Premium White Cheese or 1 pound Farmer's cheese (2 pkgs Friendship brand)
  • 2 Eggs
  • 1 Tbsp. Baileys' Coffee Creamer - Crème Brulee (or use 1 tsp. Vanilla extract)
  • 2 Tbsp. Sugar or more if you like
  • ½ tsp. Salt
  • ½ Cup Flour
  • ½ Cup Blueberries (optional)
  • extra flour, for drenching
  • oil for frying (used 2 Tbsp. Light Olive and 1 Tbsp. Hazelnut for added flavor, vegetable oil can be used as well)
  1. Empty the package of white cheese into a large bowl and shred or mash it well with a fork so that you have small curds.
  2. Add in eggs, creamer, sugar and salt. Mix well.
  3. Add flour and blueberries (if using) and gently combine.
  4. Add flour to your workspace. The easiest way to make these looking uniformed is to place the cheese mixture into the flour and rolling it into a long log covering well with flour on all sides.
  5. Cut the dough into equal pieces.
  6. Take each piece and dust with flour. Shape into ¾ inch thick circles. Make sure the syniki are not sticky on any sides.
  7. Heat a large skillet over medium heat. Add about 3 tbsp. of oil . Reduce heat to medium-low.
  8. Gently place floured syrniki into the pan and cook for about 3 to 4 minutes per side until golden brown.
  9. Transfer to a warm plate and cover. Continue with another batch.
  10. Serve with sour cream or jam, or both!!! :-)
