Matzah Nachos with Guacamole

  • Matzah Nachos:
  • MANISCHEWITZ Egg & Onion Matzo
  • Bacon Bits or Turkey Bacon (or skip)
  • Shredded Cheese
  • Pico de gallo:
  • 2 Medium Tomatoes
  • ½ tsp. Garlic Powder
  • ½ tsp. Oregano
  • ½ tsp. Chives
  • 1 Tbsp. fresh minced Basil
  • 1 tsp. Lemon juice
  • 1 Tbsp. Olive oil
  • salt and pepper to taste
  • Guacamole:
  • 2 ripe Avocados
  • 1 Tbsp. Lemon juice
  • ½ Tbsp. Garlic Powder
  • salt and pepper to taste
  • Garnish:
  • Sour cream
  • Sliced olives
  • chives
  • minced Basil
  1. Mix the ingredients for the Pico de gallo to let the tomatoes marinate while you prepare Matzah Nachos.
  2. In a medium bowl, mix sliced tomatoes, garlic powder, oregano, chives, basil, lemon juice, olive oil, and salt/pepper.
  3. Preheat oven to 400F degrees.
  4. Break Matzah sheets and top with shredded cheese and bacon bits.
  5. Bake for 5 minutes or until the cheese is melted and bubbling.
  6. Slice avocados and scoop out of the shell with a spoon.
  7. Add lemon juice immediately to prevent browning.
  8. Use a fork and mash to desired consistency.
  9. Add garlic powder, salt, and pepper.
  10. Garnish with sour cream, olive slices, chives, and minced basil.
