Salmon - Zucchini Gnocchi/Patties
  • 1 Cup Cooked Salmon (use can use canned Salmon)
  • 1 (7.5 oz) package Farmers Cheese (ricotta or cottage cheese should work as well)
  • 1 med Zucchini
  • 1 egg
  • 1 Cup Flour
  • 1 Tbsp. Parmesan cheese
  • salt/pepper
  • any spices that you like (dill, parsley, cilantro)
  • tomatoes
  • onion
  • garlic
  • parsley
  • Olive oil
  • butter
  • Wine (any)
  • lemon juice
  • salt/pepper
  1. In the large mixing bowl, add flaked salmon, egg, parmesan and farmers cheese.
  2. Shred zucchini and squeeze as much liquid as possible. Add to the bowl, mix all together.
  3. Add salt and pepper and adjust the flavor.
  4. Add flour and mix well.
  5. Place in the refrigerator for 20 min, it will be easier to shape later.
  6. Meanwhile, prepare the veggies by heating the skillet to Med-Hi.
  7. Add Olive oil and sauté the sliced onion first, until translucent and starting to brown.
  8. Add sliced tomatoes and diced garlic, sauté for a couple of minutes.
  9. Add wine, lemon juice, butter and salt/pepper. Adjust to taste.
  10. Take the Salmon-Zucchini mix out of the refrigerator.
  11. Place on the floured surface.
  12. Take a large spoonful of the mix and roll into a log.
  13. Cut into several segments. Roll each into flour and set aside.
  14. Continue with the rest.
  15. Or, you can make the mix into the patties, like I have done.
  16. Take a spoonful of the mix into your hands, roll into a ball, flatten on the floured surface and set aside.
  17. Heat a large pan on medium, add Olive oil and gnocchi or patties.
  18. Cook for a couple of minutes on each side until golden brown.
  19. They should be Crispy on the outside and Soft on the inside.
  20. Serve with the sautéed veggies and an additional chopped parsley.
  21. This is one of the Tastiest meals!
