Easy Meatloaf Cups

Serves: one dozen
  • 1½ to 2 pounds ground beef chuck
  • 2 large eggs
  • 1//2 cup pasta sauce
  • ⅓ cup seasoned Italian bread crumbs
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • ½ tsp salt/pepper
  • 1 cup shredded part-skim mozzarella cheese
  1. In a large bowl, combine meatloaf ingredients and mix well.
  2. Use muffin cups for easier cleaup or spray with No Stick Cooking Spray and brush the entire cups.
  3. Divide into 12 portions; press each onto the bottom and up sides of a greased muffin cup.
  4. Add cheese to centers.
  5. Bake in the Preheated at 375°F oven for 20-25 minutes or until meat is no longer pink.
  6. Serve immediately with additional pasta sauce and cheese if desired.
  7. Or cool, place in freezer bags and freeze for up to 3 months.
