Father-in-law's 82nd Birthday Dinner, Tablescape and Recipes!

Birthday celebrations continue… and this time it’s my Wonderful Father-in-law’s 82nd Birthday! 

My inlaws have been like parents to me since I was 16 years old. So I feel very close to them. They gave me love and support when I needed it, they welcomed me into their family and now I make sure they are well-taken care off, smiling, and happy!

I don’t mind cooking at all when I have the energy, not sick, and no headaches. I enjoy being productive and seeing happy and smiling faces! 

Since just 10 days ago we celebrated my birthday, I’ve decided, well…  actually I’ve been asked to COOK LESS, PLEASE!

But, those that know me, I can’t do simple, if I start cooking then you will see several dishes!

Plus we all enjoy – The Leftovers! And I can relax for the next couple of days! Bonus!

We LOVE, LOVE this CLASSIC salad! I make it weekly for us.

Sometimes I shred my own ingredients, but often buy a packaged coleslaw mix at Publix and just add the dressing.

How to make Coleslaw salad


Red Cabbage, Green Cabbage, and Carrot finely shredded.


– Mayonnaise
– Mustard
– Wine Vinegar
– Salt/pepper 
adjusted to proportion and taste

We Love these store-bought Rana Chicken & Roasted Garlic Ravioli! This brand is delicious!

I always add caramelized onion, mushrooms, and tomatoes to ravioli or potstickers. The flavors complement so well and you can make a vegetarian meal this way.

How to make Fried Rice


1 Tbsp. butter
1 Tbsp. light olive oil
2 tbsp. sesame oil
2 large eggs 
2 cloves garlic, minced
2 cups. cooked long-grain rice 
3-4 tbsp. low-sodium soy sauce
frozen veggie mix
salt/pepper to taste

Heat a large skillet over high heat.
Add butter and oil, cook garlic until fragrant.
Add cooked rice, sesame oil, soy sauce, and cook for a couple of minutes stirring until heated through.
Move rice to the sides making a room to cook the eggs.
When eggs are cooked, add mixed veggies.
Mix well and serve.

Grilled Shrimp Skewers with peppers and onions

Grilled Shrimp Skewers with peppers and onions

I have used my beloved Cuisineart Griddler to grill these Shrimp skewers at home.

These Raw Shrimp Skewers were bought at Publix but you can easily make yourself.

I have marinated shrimp, onion, and peppers in low-sodium sauce, teriyaki sauce, garlic, ginger, and light olive oil overnight.

Then grilled on skewers the next day and sauteed the veggies on the skillet.

This AMAZINGLY TASTY dish doesn’t look as pretty as I wanted, but it was the “best seller” lol on the table! 

It was a last-minute decision since I had all of the ingredients on hand.

On the bottom, braised cabbage with caramelized onion, pasta sauce, dill and salt/pepper. 

On top, baked and breaded chicken breast meat sliced.

Super easy! 

You will need 3 bowls. One with flour, second eggs and half/half mixture, third Italian Style breadcrumbs and Grated Parmesan cheese.

Just drench chicken breast into flour, then egg mix, then breadcrumbs.

Place on the foil-lined and greased cookie sheet.

Bake in the Preheated at 400F oven 20 minutes, flip and bake for an additional 10 minutes. 

Perfect in the sandwiches or sliced on top of your salad!

Creamy Tomato Sauce:

Pasta Sauce, Sour Cream, Dill and salt/pepper. Mix proportions to taste.

Warm-up on the stove or microwave and serve on top of cabbage and chicken! Delicious!

To make Pizza at home, I normally use Publix’s made FRESH DAILY dough, it’s THE BEST! 

But my mother-in-law bought these Mama Mary’s Original Pizza Crusts to try.

I’ve added Pizza Sauce, 6 kinds of cheese mix, fresh oregano and bacon bits! Came out Delicious!
