Celebrating Joshua’s College Graduation! We had a small get-together with family for such a special occasion. I prepared some of my family’s favorites.

Life moves too quickly for our liking. It seems that Josh started college just yesterday, and now, 3 years later, at just 20 years old, he graduated with a BA in Psychology and a minor in Legal Studies with a 4.0 GPA!
 
He is now moving on to the next chapter of his life—Law School for another three years.
 
We are overjoyed with all of Joshua’s achievements!

I’ve homeschooled Josh from his early years until 3rd grade. By age 5, he could read/write and add 3-digit numbers in his head. We instilled in Josh the love of learning and logical/critical thinking early on.

Phi Beta Kappa HONOR Society

We are Celebrating Josh’s induction into Phi Beta Kappa Society, the highest honor society you can be inducted into!
 
You have to have at least a 3.7+ GPA and be selected by professors at the college, along with several other requirements. Josh has a 4.0 GPA! Only a small group of 30 students were selected this year, and Josh was one of them. We are so incredibly proud of him!

Special dinner

I usually spend a day brainstorming and narrowing down my very long menu plan.
 
Murphy’s laws always come in handy.
 
Nothing is as easy as it looks. Everything takes longer than you think. Anything that can go wrong will go wrong

My reduced to manageable work menu.
 
My mother-in-law’s favorite and I always try to have it on my table: Young boiled potatoes with sunflower oil, garlic, dill, and Seledka (Herrings) from the European market.

I have made a simple salad with tomatoes, cucumbers, marinated onions, and carrots, seasoned with my favorite Za’atar seasoning and Olive oil.

Smoked Salmon sandwiches with cream cheese, smoked salmon, tomatoes, and cucumbers.
 
As usual, all of the ingredients are from Costco. I love their bread, smoked salmon, and produce!

We buy head-on shrimp at Costco every single time! They taste completely different, much more tender and flavorful than shrimp without the heads. 
 
You can bake them in the oven for 10 minutes at 400F, sprinkled with garlic powder, paprika, and Italian spices.

Creamy Parmesan Shrimp Pasta is my family’s absolute favorite! I will write a separate post for this incredible recipe!

This Instant Pot Lamb and Rice (Plov) is made with seared lamb, carrots, garlic, and spices to elevate the flavors to new and delicious levels. The best part is that it’s cooked in one Big pot!

Another favorite from Costco is the Kirkland Signature Five Cheese Tortelloni with Parmigiano Reggiano and RAO’s Marinara sauce. It’s sprinkled with grated Parmesan and home-grown basil!

To finish off dinner and save my time, we decided to try Costco’s Lemon Blueberry Loaf and Chocolate-Dipped strawberries, which we all enjoyed!

My family always appreciates my effort! I was able to pack food for our son and my in-laws to go.
