Hope everyone had an enjoyable Mother’s Day! I’ve decided to cook this year to make it more special for everyone.
Made a few new dishes that I will post later. Didn’t bake any sweets since my crew asked not to. Everyone is watching their figures, LOL, even my teenage boy watches his calorie intake.
I always prepare a lot of food even though we have a small family since I pack food for Alla (mother-in-law) to take home.
She doesn’t cook much for herself since she takes care of her husband that has been through so much and can’t eat most of the things. So it’s a big treat for her to have Yummy leftovers!
Mediterranean Couscous Stuffed Eggplant with Tahini sauce
When I need to cook for the holidays or special occasions, Costco saves me so much time, they have such a great selection of prepared foods in the freezer section.
My modest menu this year
Appetizers:
Spanakopita (Costco)
Marinated peppers
Mᴀʀɪɴᴀᴛᴇᴅ Pᴇᴘᴘᴇʀs
Baked colorful salad peppers, olive oil, white wine vinegar, red onion, garlic, dill, salt/pepper

Roasted potatoes
Salad Olivier and Chicken Liver pate – deliciously prepared by Mother-in-law
How to make Salad Olivier
2 pounds potatoes, boiled, peeled, and finely diced
2 eggs, hard-boiled, finely diced
1 onion, finely diced
3/4 cup mayonnaise
3 small dill pickles, finely diced
1 cup canned peas
Salt and pepper
Mix all ingredients and enjoy!
Main dishes
Greek marinated and pan-seared lamb chops with mushrooms and tomatoes

I bought beautiful baby eggplants and Costco and was looking for just the right recipes. I couldn’t find exactly what I was looking for so I’ve created my own! Recipe coming up.
Breaded Shrimp (Costco) with Edamame
These are such a great value at Costco. I think $7.50 per pound, comes in a 2-pound package. Already cooked, just warm up. Great when you have people over.
Teriyaki chicken fried rice (fried rice from Costco, I’ve made the Teriyaki Chicken go with it)
For my small crew was plenty of food!
Made flower arrangements for the Mother’s Day table!
Bought flowers at Costco and decided to make my own arrangement.
I just love Fresh flowers on the table!
The dress I’m wearing had a string top, long and wide, loved the color, made few alterations and changed the neckline – Ta-Da!
Sewing is my down, relaxing time!
Love being a Mom! Thankful to God for this gift! He gave us a Wonderful, Very Intelligent, Sweet and Kind boy to raise!
