I just want to share our Mother’s Day Dinner in a casual and relaxing atmosphere outside on our lanai. I have bought so many flowers this year that you just want to stay outdoors all the time.

I hope you all had a wonderful Mother’s Day! I just love being a Mom and my small crew, people that Love and Appreciate my efforts, who treat me like a beautiful Flower in our Family’s Garden!

Believe it or not, we didn’t even go grocery shopping for this occasion. I always have my “emergency” food from Costco in the freezer and since I cook all the time we have leftovers that I can make new again!

I have bought this gorgeous new tablecloth on Amazon recently. It’s actually a beautiful shade of blue-green but looks bluer on pictures somehow. And new cotton stripes napkins to tie the whole look together. The rug you see in the video is from Amazon as well.

Since we didn’t go out shopping for Mother’s Day, I thought I can just use the flowers from my yard but somehow that idea didn’t work too well for me. Plan B to the rescue – my FAKE TULIPS from AMAZON were just Perfect for this occasion and they look SO REAL, right?

I never panic in life and very resourceful, my motto: “When there is a will – there is a way!” I definitely follow this and make the best of any given situation.

Cooked Lobsters and raw Lobster Tails from Walmart

A few months ago we have discovered this Amazing find at Walmart and started buying lobsters and lobster tails there. Great price, delicious, and often with caviar inside. You can find them in the large refrigerators next to the seafood section. 

Last time we were shopping we just found two Lobster tails since they were sold out. I was planning to buy more but at least had those two to serve.

Costco Shrimp Tempura, Kirkland Signature 

We have been buying breaded shrimp at Costco for the longest time but wanted to try Tempura and we all Loved them. Highly Recommend! Absolutely perfect when you have a special occasion or a friend(s) stops by. 
 
Muscles from Publix had them in the freezer and I actually have a pack of muscles from Costco as well still in the freezer.

Lettuce, cucumbers, tomatoes, green onion, radish with yogurt ranch dressing, and feta cheese.

Once we tried it, we absolutely loved it and from now on I always have it in my freezer.

Rana Chicken & Roasted Garlic Ravioli

Every time I buy storebought ravioli or potstickers I try to make a meal of them by adding sauteed onion, mushrooms, colorful salad peppers, and tomatoes.

For the lamb, I’ve used Australian Lamb Leg Roast from Costco. Sliced the roast into chunks and marinated with sliced red onion and colorful salad peppers overnight in Greek Marinade.

I’ve used my beloved Griddler by Cuisinart at home.

Salmon meatballs

Salmon Meatballs

I always look for “Low Effort – High Impact” recipes but are very difficult to find.
 
I know meatballs are always a great idea for a party, but wanted a SPECIAL kind of meatball. So, I’ve basically decided to make my Salmon Burgers recipe and tweak it for the meatballs.
 
I’ve used Baked Salmon for this. Just brush salmon with a mix of butter/honey/lemon juice and bake at 400F for 15 to 20 minutes.
These salmon meatballs resemble a Jewish Gefilte fish (farshirovannaya ryba) recipe in a way.

How to make Salmon Meatballs

Ingredients:
 
– 1 1/2 pound Cooked Salmon
– 2 large eggs
– 1 Cup Italian flavor Panco bread crumbs
– 2 green onions, minced
– 1 medium tomato, diced
– 2 Tbsp. fresh dill, minced
– 2 Tbsp. Olive oil
– salt/pepper to taste
 
Directions:
In a large bowl, mix all of the ingredients.
Line a cookie sheet with parchment paper.
Take a small bowl of water, wet your hands, and shape the Salmon mix into meatballs. Leave space in between.
Bake in the Preheated at 350F oven for 15 – 20 minutes.
Serve warm or cold.
 
You can serve Salmon Meatballs as is, or add butter and lemon juice, or use your favorite Teriyaki sauce.
 
I like to serve Salmon Meatballs with Avocado Sauce (avocado, Greek yogurt, lemon juice, dill, garlic powder, salt/pepper).

Costco to the rescue every holiday and every special occasion.
 
It’s pretty easy to cook just a weekday dinner, but when you have to make lots of dishes and you are the one that is cooking extra help (Costco) is extremely helpful and I couldn’t create such feasts without them. Loyal customer here as you can tell!

My loving crew! It’s getting more difficult to impress them, lol, I kinda spoiled them (guilty), but they love the new setting every time and always very appreciative of all the effort that goes into creating such feasts! It’s a lot of work, for sure.
 
If you like my dress and shoes – I bought them on Amazon as well. This dress is so light and airy and will compliment many figures. The Clarks shoes are known for their comfort and these are the most comfortable I own.
