Chicken Parmesan


This Chicken Parmesan recipe been my Favorite recipe for years! I would always make it when we had company over, and always –  a Huge Success! Very easy to make, just few ingredients and couple of steps and then… you can Enjoy this Amazing Italian dish! Bon appetite!!! 

This recipe, as many others, are partially prepared on the stovetop and then finished in the oven in order to get the Most flavor.


Chicken Parmesan




Slice large onion and sauté in Olive oil for few minutes. Add sliced mushrooms, sprinkle with salt/pepper and sauté until soft.

Cook chicken breasts on medium heat for 5 minutes on each side, until almost done.

Place cooked chicken breasts on top of your onions/mushrooms mix. Add couple of tablespoons of pasta sauce to cover each piece. Add additional onions/mushrooms mix on top and sprinkle with Parmesan Cheese.

I really like Parmesan Romano Pasta sauce that I got at Target recently, lots of flavor and has a thick consistency. This dish success relies on a Good pasta sauce. Every Pasta sauce will produce slightly different results. So far, I tried many sauces and Enjoyed them all. But still, get a Good one! The Mama Francesca Parmesan cheese is the best I have tried!

Bake in the Preheated 350F oven for 25- 30 minutes. Take it out, add Mozzarella cheese (or any cheese you have on hand) and Broil for about 3 minutes, watch so it doesn’t burn.

Chicken Parmesan

Last night made this again with an addition of Eggplant. Just slice an eggplant, saute in Olive oil until soft. Season with salt/pepper and add on top of your chicken. Oh my! SO GOOD!!! Packed to for Hubby’s lunch and he Loved it! (will take a better picture next time, just wanted to share since it’s So Delicious).

The Best Chicken Parmesan

Ingredients
  • 2 pounds Boneless, Skinless Chicken Breasts
  • 1 Cup Flour
  • 2 Eggs
  • ½ Cup Milk
  • 1+ Cup Italian Style Breadcrumbs, as needed
  • 1 Large Onion
  • 1 sml pkg of Baby Bella mushrooms
  • 1 Cup Parmesan Cheese
  • 1 can Pasta Sauce
  • 1 Cup Shredded cheese
  • salt/pepper
  • Olive oil
Instructions
  1. Add 2 tablespoons tablespoons of pasta sauce and same amount of Olive oil to the bottom of your baking pan.
  2. Slice large onion and sauté in Olive oil for few min. Add sliced mushrooms, sprinkle with salt/pepper and sauté until soft.
  3. Divide the mixture so you will have enough in between each chicken layer and on the bottom of your baking dish. The pasta sauce and the chicken will absorb the sautéed onions/mushrooms for more flavorful results.
  4. Place chicken breasts between sheets of heavy plastic or freezer bags and firmly pound chicken to a thickness of about ½-inch.
  5. Prepare 3 dishes, I use 2 large paper plates (then just toss them out) and a glass bowl for the egg/milk mix.
  6. Plate 1: flour, salt and pepper
  7. Glass bowl: eggs, milk
  8. Plate 2: breadcrumbs and Parmesan cheese
  9. Drench the chicken in flour, shaking off the excess. Dip the chicken in the beaten egg/milk mix and cover completely. Then, roll in breadcrumbs/Parmesan mix.
  10. Add more oil to your skillet and place chicken. Cook on medium heat for 5 minutes on each side, until almost done.
  11. Place cooked chicken breasts on top of your onions/mushrooms mix. Add couple of tablespoons of pasta sauce to cover each piece. Add additional onions/mushrooms mix on top and sprinkle with Parmesan Cheese.
  12. Continue with the next batch of chicken breasts, layering same way in your baking dish. Add more pasta sauce and Parmesan cheese on top.
  13. Bake in the Preheated 350F oven for 25- 30 minutes. Take it out, add Shredded cheese and Broil for about 3 minutes, watch so it doesn't burn.
