Our Valentine’s dinner! We actually had a couple of special Valentine’s Dinners this year.  Why not? Life and Love should be celebrated!

On our recent trip to Costco picked up these Beautiful Heart-Shaped Italian Four-Cheese Ravioli from Nuovo Pasta, an incredible blend of four types of cheeses including parmesan, ricotta, mozzarella, and asiago.

These look so beautiful and taste incredible. 

Once I saw them, I’ve decided I have to make Valentine’s dinner for us and use these cute ravioli!

But since I wanted to make something fancier than just ravioli with marinara sauce, which to tell you the truth is all you need really, I have added Shrimp in Creamy Greek Yogurt and Mushroom Sauce.

For an appetizer, I just made simple Smoked Salmon Sandwiches: toasted sliced baguette, cream cheese, Costco’s smoked salmon (the best), cucumbers, tomatoes, and radishes.

A simple Fresh side salad with spring mix, bomb cherry tomatoes, cucumbers, radish, green onion, and feta cheese.

Dressing: extra virgin olive oil, Italian seasoning blend, garlic powder, and white wine vinegar.

The Cherry Cream Cheese pie was so DELICIOUS, I hope you will try it!

Super easy to make and helps if you have a good quality pie dough on hand.

I bought the Dark Sweet Cherries can and Pie Crust at the “Sprouts Farmers Market”. They always carry quality products. 

The Wilton Heart Shaped pan I had for some time now. Bought it at Marshall’s a while back and finally got to use it. You can find similar ones on Amazon.

How to make Cherry Cream Cheese pie

Ingredients: 

  • 1 Store-bought pie crust 
  • Philadelphia Original Cream Cheese, 8 oz Brick (less fat)
  • 4 tbsp sugar
  • 1 tsp vanilla extract
  • flour for dusting your work surface
  • canned cherry pie filling (used 15 oz. can)
  • 1 egg, beaten 
  • 1 tbsp sugar for dusting

Directions:

In a large bowl mix together your cream cheese, sugar, and vanilla extract. Set aside.

  • Sprinkle a little bit of flour on your workspace and unroll your pie crust.
  • Use a rolling pin and roll the dough a little thinner so it fits into your pan.
  • Spray your pan with non-stick Pam or similar.
  • Spread one layer of dough.
  • Add cream cheese layer.
  • Add a cherry layer on top.
  • Spread the second layer of pie crust. Decorate as you like.
  • Brush with egg wash and sprinkle with sugar.

  • Bake for 18-20 minutes or until golden brown.

But one dinner is never enough, lol, so for round 2 – we had LOBSTERS, Loaded Baked Potatoes, and Dark Chocolate Covered Strawberries

Valentines 2021 continues

Actually, the LOBSTERS were not a huge splurge, they are very reasonably priced at $16.99 for two good-size cooked lobsters!

You just need to steam them 8 to 10 minutes and enjoy!

One of our favorites are LOADED Baked potatoes. I don’t think you need a recipe for it!

Dark Chocolate covered strawberries! 

Unfortunately, my white chocolate did not melt well so they came out imperfect looking. Oh well, still delicious!

Cook Time: 20 minutes
Total Time: 30 minutes
